Once-Upon-A-Time Small Almond Cookies



The other day I flipped through Max Brenner's Dessert Cookbook... it was pretty interesting, although I was bummed at the lack of photos of the dishes.
Nonetheless, this sounded delicious and I decided I had to try it tonight.


*I'm writing my own amended version of the recipe since I modified some things to make it my own.


One thing to note: The book says the recipe yields 30 cookies but I ended up making well over that amount..


Almond Cookies
Adapted from Max Brenner

2.5 sticks unsalted butter, softened
1 granulated white Sugar

3/4 cup brown sugar
2 large eggs
2 teaspoons vanilla extract
2 3/4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1.5 teaspoons ground cinnamon
1/4 teaspoon nutmeg
1 cup almonds, finely ground


6oz chopped chocolate

1. Cream butter and sugar together in a mixer until light and fluffy... mix in eggs and vanilla
2. Sift flour, salt, baking soda, 1/2 teaspoon cinnamon, and nutmeg
3. Stir in almonds (I had whole ones that I ground in a food processor)
4. Gradually add dry ingredients to wet until incorporated

*Chill dough for at least an hour in the fridge*

Drop dough tablespoon size on pan (I used parchment paper which worked amazingly)
and bake at 350 degrees F for about 8-12 minutes or until the cookies turn golden brown on the edges.

Melt chocolate in a double boiler with 1 teaspoon of cinnamon and dip half of each cookie in it. The original recipe called for milk chocolate but I mixed it with some semi-sweet since I prefer darker chocolate to milk.

Overall, the cookies came out light and crispy on the outside with a soft middle.
I don't think they needed the chocolate coating at all, but it looked fancy so I went for it.




I mailed some of these to my darling JBS all the way in St. Louis as good luck gifts for him and his friends on their medical school exams and they traveled well! He enjoyed them very much, and also ate 5 in one sitting without realizing it, yikes.
