Double/Triple Chocolate Chip Cookies


So, I attended the University of Georgia for my undergrad. Their dining halls are known to make very delicious foods, they've won something like 54 awards over the years for their meals... I only ate there the first year because after that I lived off campus. But I did love that first year. They have such a variety! I went back a couple of times over the years, and it was still just as tasty. But the best ever dish they had were their chocolate cookies. It's odd because I love a classic chocolate chip cookie and generally the double chocolate ones are almost too chocolate-y for me. But this one was just right.

It was dark, deepened by cocoa and never stale or crunchy. It was perfectly chewy and the chocolate chips in it just put it over the top. I used to dream about these cookies after my first year. I even snuck some out for my friends at home, and they loved it too!
I tried to buy Pepperidge Farm cookies that looked like they might taste the same but those were so horrible. They had an odd aftertaste and were pretty much the worst I'd ever tried.
I tried my own hand at a couple double chocolate cookie recipes but I didn't like any of them.
Until. Now.



I found them!

These cookies are so chocolate-y and rich you'll definitely need a glass of milk to wash it down...

I saw this recipe in Baking Illustrated and pretty much dropped everything to make it. However, I didn't add the chocolate chips to the entire dough. Instead, I rolled it up into plastic wrap and stored it in the fridge. Whenever I took some out, I put the chips in the particular batch I was making. This left a lot of room for experimenting, although it took some time and patience to put in about 6 chips in each cookie!

I tried ones with salted caramel on top, and some with white chocolate and pistachios. My favorite though was just plain ole milk chocolate chips. It was SO delish. I'm pretty sure that's how the ones at the UGA dining halls were... I had a hard time keeping my hands off these...

Double/Triple Chocolate Chip Cookies
Makes about 40

2 cups all-purpose flour
1/2 cup dark cocoa powder (Dutch-processed or special dark)
2 tsp baking powder
1/2 tsp salt
8 oz semi-sweet chocolate
8 oz dark-chocolate (60%)
4 large eggs
2 tsp vanilla extract
2 tsp espresso powder
10 tbs unsalted butter at room temp
1 1/2 cup packed brown sugar
1/2 cup granulated sugar
2 cups milk chocolate chips (or any other fillings you want to try)

Melt the chocolate (be careful not to burn it). In a separate bowl, combine the eggs, vanilla and espresso powder. Beat the butter in a bowl until it becomes smooth, and add in the sugars. Add in the egg mixture and continue to beat. Add the chocolate and continue to beat. Lastly, add in the dry ingredients (flour, baking powder, and salt). Beat until it's just all combined. Fold in chips or any chip/nut combos.

Preheat oven to 350 degrees F.
Scoop the dough however big you want it and keep a couple inches apart on the baking sheet.
Bake about 10-12 minutes and let it cool before eating.
