Strawberry Cupcakes


I just bought a gigantic box of strawberries from Costco, and they're all so yummy. So I decided to try strawberry cupcakes. I was thinking more like a strawberry muffin, but at the last minute I decided to frost them. I just finished a cake decorating class with my sister.. we both had to buy so many frosting tips... so I think we're just excited to practice our frosting on anything and everything. Plus it's fun!


So I made typical buttermilk vanilla cupcakes and added two cups of chopped strawberries in there. These cupcakes are super moist. So moist that you have to wait till they're completely cool to take them out of the pan or else they will break.

I added the same frosting that I've been obsessed with recently, but added a half cup of strawberries that I chopped and then mushed to bits with a mortar and pestle.

I really do love this frosting... It's not too sweet, just soft and light. Everyone I gave these cupcakes to seemed to really enjoy them. I would eat these without frosting as well, but they're kinda ugly without them...

Here's my adapted recipe!
Ingredients:
2.5 cups cake flour
1 tsp baking soda
1/4 tsp salt
1 stick unsalted butter at room temp
1 1/4 cup sugar
2 eggs
1/3 cup buttermilk
1/4 cup canola oil
1 tsp vanilla extract
2 cups chopped strawberries

In a bowl of a mixer, cream the butter and sugar until fluffy and then add eggs one at a time until combined. Add the buttermilk, oil and vanilla. Then add flour/salt/baking soda till combined. I was afraid of all the strawberries sinking to the bottom, so I added one cup directly to the batter and mixed it up. Then after I poured the batter into the cupcake pans, I distributed the rest of the strawberries on the tops of each one.
Fill the cupcake pans 3/4 way. These make about 24 regular cupcakes (I made 15 regular cupcakes and 12 mini cupcakes)

Strawberry Frosting
Mix 5 tablespoons of flour with 1 cup of milk in a saucepan. Once stirred, put it on heat and keep stirring until it resembles mashed potatoes. Add 1 tsp of vanilla extract. Then put it in the fridge until it's completely cooled.
Blend 2 sticks of butter (at room temp) with 1 cup of sugar in a bowl until light and fluffy.
Mush the 1 cup of chopped strawberries.. Either you can do this with a mortal and pestle or in a blender or food processor.
Add the strawberries and the flour mixture to the butter/sugar and beat with electric mixer until light and fluffy!
