Chocolate Chip Cookie Dough Cupcakes
I finally did it! I'd had this recipe on reserve for months, but I don't like uncooked cookie dough much... until this cupcake. The frosting on this cupcake tastes exactly like cookie dough, I kid you not! I didn't think I'd like this but I really really did. I made the original recipe to the T which makes 24 cupcakes. I was wondering what I was going to do with 24 since I usually have trouble just getting rid of 12... But once people discovered these, I had to sneak away enough to take to STL for Joe and friends!
My family loved it, my friends loved it, and even the concierge in the building loved it. :)
It's a subdued sort of cupcake, since it's not that sweet. It's mostly brown sugar and chocolate chips. I also dropped a dollop of "cookie dough" in the center of each cake after it was done. I put it in quotes because I couldn't put raw egg in it so it's dough made with condensed milk, which I found just all right. My favorite was the frosting. But my family insisted the dollop of dough contributed to making the cupcake great, and that it was integral to the taste. My friend Zebo said this one knocked the nutella banana cake off her top list..
This wasn't too bad to make, but it had too many bowls involved. I did like how the frosting held up extraordinarily well. I carried these from Atlanta to St. Louis and they managed the trip just fine. My salted caramel cupcakes on the other hand, were delicious but way too melt-y :(
I would have said this cupcake was only for the raw cookie dough lover but I take that back. I still won't eat cookie dough or the cookie dough ice cream but I love this cake.
