I recently had a hospital scare. I was up around midnight, readying for bed when I felt a sharp pain in my abdomen, and it did not go away. Joe insisted I go to the ER and I resisted until I literally couldn't walk anymore.
I've always been a little afraid of hospitals and of doctors. The funny part is that nearly all my good friends are doctors-in-training, and Joe is spending this entire year doing hospital shifts. But yes, outside of what I've seen on Grey's Anatomy (which really is more about the drama between the surgeons, not so much on the patients) I had never been a patient or visited anyone there.
I think I was in shock for most of the day... I was shivering intensely and the process of me getting hooked up to an IV and getting morphine was just so surreal. I also kept telling Joe that I was so surprised how nice everyone was, hehe. I don't know what I expected... It wasn't as scary as I thought, but still pretty scary.
Turns out it wasn't appendicitis, thank goodness, but most likely an ovarian cyst, which is apparently very common in women. I had no idea. I'm just glad there's no surgery involved! And hopefully that pain is gone for good.
Onwards, to the post! I love jell-o. They gave me a lime jell-o in the hospital and after not having eaten anything all day, my eyes lit up. But then I took one bite and I was sorely disappointed. It was pretty disgusting, I guess in keeping with the whole "hospital food is baaaad" belief.
I don't understand though! Jell-o is jell-o! It's from a packet! Grr.
When I got home, jell-o was still on my mind. I had to make a good one to get that horrible hospital food out of my head.
So I went for rainbow jell-o. Super easy to make, attractive presentation, minimal wait time. And it tastes soooo goood!
Something about jell-o just makes me happy... perhaps it's the jiggly aspect of it. Or the bright colors. I love the layers of condensed milk in the middle as well to break up the colors. Eating it all in one bite makes it hard to distinguish the flavors, so sometimes I like eating it in slices, layer by layer. :)
Psst. Want to make it better? Add some whipped cream on top!

Makes 1 9x13 pan
- 5 packets of jell-o (your choice) - I used strawberry, blue raspberry, lemon, lime, orange
- 1 can condensed milk 14oz.
- 5 packet Knox unflavored powdered gelatin
Spray the bottom of a 9x13 pan.
Mix one packet of jell-o with half a packet of gelatin.
Add a 1/2 cup boiling water.
Stir to dissolve.
Cool to room temperature.
Pour into 9x13 pan.
Refrigerate for 15 minutes and allow to set.
Meanwhile, mix the entire can of condensed milk with 1 cup boiling water.
In a small bowl, sprinkle 2 packages of the unflavored gelatin over 1/2 cup cold water.
Let it stand for a few minutes and then add the cold gelatin mix to the hot condensed milk.
Let the condensed mixture cool and then add about one cup over the layer of jell-0.
Repeat with each layer until you finish it all, giving it ample time to set!
*You could probably make these alcoholic jelly shots if you like, adding in a bit of alcohol into the water that mixes into the packets! Heart-shaped rainbow jelly shots would be great for a Valentine's Day party!
