Banana Bread w/Caramel Glaze



This banana bread is, as Joe would call it, cray-cray!




This served as a pretty delicious breakfast for a week... Joe and I were bummed when it was over. I've finally found a recipe that doesn't have butter in it, or oil! It's banana-y all the way, plain 'n simple. I'll definitely be repeating this in other variations.
Also the caramel glaze has more than enough butter to make up for the bread, trust me.

I have a major sweet tooth, or at least I thought I did... Sometimes I think I still do. But even I found this caramel almost too sweet. However, there's so little sweetness in the banana bread that the caramel is amazing with it. I also overcooked the butter by mistake and so it tasted browned butter-y which was even better.


The caramel glaze sets quickly and gets crusty and awesome... Next time though, I may save some of the caramel for something else instead of using it all on one loaf, since it made a rather thick layer. But that's purely preference... Either way, you will surely be picking at the crusty pieces that dry and fall off, if you truly have a sweet tooth, that is. 

I would have loved to slice the banana bread horizontally and add in a layer of the caramel glaze for better evenness, but then I supposed it would have been more like a cake.



Nope, this is a classic banana bread loaf, a great comfort food, with a sinfully sweet and delicious brown sugar glaze!

All I can say is, you should try this. You really should.


Caramel Banana Bread

makes 1 large loaf
for the banana bread
  • 1 3/4 cups flour
  • 2/3 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup mashed bananas
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 2 tablespoons milk
  • 2 eggs
Preheat the oven to 350F. 
Prepare a large loaf pan by spraying it with non-stick cooking spray.
In a large bowl, combine the flour, brown sugar, baking powder, baking soda, spices, and salt. Mix well. Add in the bananas and milk and mix with a stand or hand-held mixer for 2 minutes. Add in the eggs and mix to combine.
Pour the mixture into the prepared pan and cook just until a toothpick inserted in the middle comes out clean, about 1 hour.
Cool completely then remove from baking pan and top with caramel glaze.
For the glaze
  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 2 teaspoons heavy cream
  • 1 cup powdered sugar


In a saucepan, combine the butter and brown sugar. 
Bring to a boil, then remove from the heat and let it sit for 5 minutes.
Whisk in the cream and powdered sugar until no lumps remain. 
Immediately pour over the loaf of banana bread.

  4. Looks fantastic!! The riper the bananas, the sweeter the bread. Mmmm. Might try it with a partial substitution of whole wheat pasty flour (to ease the conscience).

  5. hi there! i found your blog earlier this morning and have been at it for about 3 hours now..there was a point where i was scrolling through the pages/pictures and needed to tell you how amazing they are (and how hungry they've been making me, haha :) -i had jaw surgery 3 weeks ago and have been on a liquid diet, so I look at pictures of food in my spare time). anyway, just wanted to say that everything looks amazing, great, delicious, etc. as someone who (in regard to desserts) is pretty picky -as in I'm limited to chocolate, cream, mousse, stuff like that- I'm definitely looking forward to trying some lemon or mangoes on desserts when I can eat again. fantastic job!
