Banana Muffins with White Chocolate & Macademia Nuts







I have this issue where I seriously run out of snacks to eat. I can't keep eating chocolate and sweet stuff as a snack, but I don't often enjoy crackers, or breads, or chips. Chips are my favorite to eat with a sandwich, but not really otherwise. 


I usually just stick to fruit... a banana or an apple, but now since my stepdad is out of town, my mom and I can't seem to get through the bananas fast enough without a couple of them going black. So I turned to making some banana muffins. I used to love my mom's banana walnut bread when I was a kid, and also more recently, her banana chocolate chip walnut loaf. But I like this is in muffin form because I can take it with me, and it's already portioned out. 





The first time I made this, I used the recipe for my banana nutella muffins, and just cut out the nutella. I added macademia nuts and white chocolate, a combination I've only tried maybe once in my life and that too years ago. It. was. so. delicious. So delicious my mom didn't even want to take it to the office because she thought it was too tasty.




But I did want to try to make it healthier since it does take a bit of butter to make it (which really contributes to the taste). I replaced the butter with applesauce (it's the same ratio as if you would have replaced it with oil) and I used whole-wheat flour. It turned out great! The use of applesauce made it a bit more sticky and not as soft and crumbly, but more moist. I would definitely not put in the white chocolate chips into the muffin if I use applesauce. The white chocolate chips just did not belong there. They were too sweet and didn't add much to it. I'd probably just add walnuts or pecans next time!


This served as a great snack, and the whole-wheat flour made it dense and filling. One was plenty! It was great to take to jury duty as well, since I was stuck there for quite a while.


Banana Muffins w/White Chocolate and Macademia Nuts
makes 12

190g AP flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1-2 medium mashed bananas
70g melted butter 
1/4 cup milk, room temp.
1 egg, room temp.
50g granulated sugar
50g dark brown sugar
1/4 cup white chocolate chips 
1/4 cup macademia nuts

Preheat oven to 375dF. Combine the flour, baking powder, baking soda and salt in a bowl. Pour the wet ingredients into the dry and fold it a few times. Fold in the nuts and chocolate.

Bake 20-25 minutes or until a cake tester comes out clean.


It's definitely more delicious with the butter, but quite acceptable and filling with the applesauce, minus the white chocolate!

  4. I just edited the recipe again, sorry about that! the original poster of the recipe also left out of the bananas so I just estimated and then in rewriting it, I forgot as well! :)

  5. No problem! :o) I added a mashed banana and some cranberries instead of chocolate chips, because I had to use them up. The muffins were absolutely delicious! Thanks for the recipe.
