Frosted Cookies for Spring!

I recently discovered the best frosting ever. Well, lots of people call it the best frosting ever. I can't decide how much I like it. I want to try adding cocoa to it, I have a feeling it'll be yummier. But so far... every time I taste a little on my finger, I just want to eat more... It's weird.

Anyway, I did a test batch the other day and tinted it green since I had some lavender sugar crystals. I thought I'd go for a nice spring cookie, even though the weather is crazy strange and we had a hint of spring for about 2 days and then it changed to near freezing overnight.. It infuriates me that some people don't believe in the climate change problem, but that's a rant for another day.

I don't have any cookie cutters other than 3 sizes of hearts, but I think everyone is tired of me making hearts all the time. So I molded these with my measuring cup. They turned out pretty well, and the frosting kinda covers the awkward non-perfect circle.

My family LOVED the frosting. It's very interesting. It's all light and whipped but not too sweet at all. It asks for granulated sugar instead of powdered, which is interesting to me. It's kinda like a buttercream frosting but.. not. It's more airy.

I really don't know how to describe it except that you just have to try it at least once. It asks for flour in the recipe, which is just so strange. I was so weirded out I read all the comments section on the link to get everyone's opinions. I really don't understand the chemistry (I definitely should have paid more attention to chemistry in high school, or maybe they should have had a special food chemistry class, that would have been cool!) but it's quite fascinating.
BTW, the link explains how to make the frosting with really nice step-by-step photos. I wish I could do more step-by-step photos except I'm lazy and I'm usually alone and my hands are messy. I don't know how people do it! Maybe someday...

Ok, so I'll stop talking about the frosting now. The cookies were made from the tart crust I used in the chocolate tart and the same dough from the linzer cookie as well. It was all yummy and flaky and way better than a sugar cookie. I've never tried frosting on a cookie before but it was different and cool, and I felt all rebellious against my regular chocolate-chip-cookie-loving self. Try it!

Recipe:

3/4 cup butter
1/2 cup powdered sugar
2 egg yolks
2 flat cups all-purpose flour

Put the butter, sugar and egg yolks into a bowl and mix with electric beater. Add the flour and blend until it forms a homogeneous paste.

Roll thin and use your cookie cutters to cut the shapes. Bake at 325 degrees for about 12 minutes. Wait until it's COMPLETELY COOL before adding frosting!

  2. Hi- So im confused. Is the recipe you listed, for the cookies or the icing? The entire blog is about the icing but then you stated to bake for 12 minutes and then apply the icing?
    Thanks!!

  3. Hey there, I posted a link to the frosting at the top of the post, in the first sentence, and the recipe is for the cookie... After it cools, you can apply the frosting on it!
    Hope that helps :)
