Blueberry Hearts for Blueberry Days...


I'm sick and stuffy. I think it's allergies but I can't really tell... It's been gorgeous outside though, and so nice to finally be able to wear dresses!
So what do I do when it hurts to talk or concentrate on a computer? Bake!


I decided to make linzer cookies. I'd been wanting to do this for so long. More specifically, it was supposed to be a Christmas gift for JBS, but then my first two tries turned out to be a disaster. The cookies would horribly spread in the oven...


This time, I decided to try blueberry ones... I'm kind of on a blueberry kick recently. My friend K helped fix a bug on my blog, and demanded blueberry macarons as a reward. But the last time I made them, the filling I used melted and soaked through the macs at room temp! Can't really mail those out... Also, my sister asked me to try to make blueberry macs for a party she would be hosting...
So yesterday I went around and tried to get as many blueberry items as possible. I bought blueberry jam and blueberry tea and a bag of frozen blueberries.
I emptied out the blueberry teabags into the batter which added a really nice aroma, and filled some with a blueberry cream cheese frosting, some with dark chocolate, and some with the blueberry jam. The cream cheese frosting won out.. So much so, that my family finished all of them, and I had none left to photograph!
But if I do end up making 40 next week, I will definitely take pics then... I'm still worried about cream cheese frosting soaking the mac though, hmm...

That was a long sidenote, sorry!

Anyway, I used the blueberry jam for the linzer cookies. I don't know why I keep calling them linzer cookies since the only thing it has in common with those is the sandwich window heart style. I loved these though. They were super yummy, even though a tad sour with the blueberry jam. My niece loved it!


Recipe:

3/4 cup butter
1/2 cup powdered sugar
2 egg yolks
2 flat cups all-purpose flour

Put the butter, sugar and egg yolks into a bowl and mix with electric beater. Add the flour and blend until it forms a homogeneous paste.

Roll thin and use your cookie cutters to cut the shapes. Spread blueberry jam (or jam of your choice) all over the full heart, and place the cut-out one on top. Dust the edges with powdered sugar!
